Blooming Business: New and Noteworthy Openings in Vancouver

By Kelsie Munoz, Destination Services Manager, Visit Vancouver WA

Spring has officially sprung — and with it comes a wave of exciting new business openings across Vancouver. Whether you’re visiting for the first time or a longtime local seeking fresh inspiration, the first half of 2025 has delivered plenty of reasons to get out and explore.

Fresh Finds: New Openings

Husubi’s Poke Shop

Once a staple at farmers markets, Husubi’s now has a permanent home downtown. Known for their craveable Spam Musubi, creamy mac salad, and vibrant poké bowls, this island-inspired kitchen brings big flavor in a casual setting. Pro tip: they often sell out, so come early — or catch them at the Vancouver Downtown or Camas markets.

La Fiesta on Main

This family-run eatery brings the soul of New Mexico to downtown Vancouver. Featuring scratch-made dishes, locally sourced ingredients, and fresh-squeezed margaritas, every meal here is a celebration of culture and craftsmanship.

Irrelevant Beer

Brought to you by the team behind Relevant Coffee, this microbrewery is a new highlight of the Arnada neighborhood. Specializing in West Coast IPAs, hazy brews, and crisp lagers, Irrelevant Beer shares its sleek, modern taproom with Goon Burger — a must-try smash burger slinger — open Wednesday through Sunday.

Señor Taps

Felida’s latest taquería is serving up more than tacos. With a cozy, community-focused vibe and a menu rooted in authentic Mexican street food, Señor Taps offers bold bites, handcrafted cocktails, and an atmosphere where neighbors become regulars.

Pour Choices Pub

In the heart of Uptown, Pour Choices is redefining the local bar scene. It’s a welcoming spot founded by locals, built for conversation, connection, and community. With a rotating tap list, run clubs, and regular events, this pub is quickly becoming a go-to for gathering with friends old and new.

El Coyote Tacos & Tequila

Open soon downtown, El Coyote promises a laid-back atmosphere with festive vibes and bold Mexican flavors. Expect tacos, burritos, tequila-forward cocktails, and a good time.

On Our Radar: Coming Soon

Minari Market

Joining the Soft Tea space on Main Street, Minari Market is set to offer a quirky combo of instant noodle bar and Asian retail shop — perfect for quick bites and curated finds.

Breakside Brewery

This Portland favorite is crossing the river, taking over the former Locust Cider space downtown. With award-winning brews and casual eats, it’s poised to become a lively favorite.

Social Kitchen

This Main Street newcomer will combine inventive dining with interactive experiences — from themed dinners to private events — all focused on food, fun, and bringing people together.

Kismet

Chef Eric Gallanter’s restaurant will bring refined, seasonal tasting menus to the historic Main Street strip. With over 40 years of experience, he is crafting an intimate, ingredient-forward dining experience for those who savor every detail.
